This is one of those simple deserts that everyone loves. I don't make my own pastry and I'm not going to apologise for that the puff is fine and it means this dish is seriously quick. I made it on Saturday afternoon, it took about 15 minutes to prepare and was ready to pop in the oven when we wanted it. There is nothing like a hot apple pie in the middle of a movie on a cold Saturday night! Enjoy.
I kg apples (I use whatever is in season and cheap)
3 tbs butter
Good handful of sultanas
1 tsp brown sugar
1 tsp ground cinnamon
1/2 tsp allspice
1/2 a cup of hot water
Squeeze fresh lemon juice
3 sheets of good quality puff pastry
Glaze: 1 tsp butter, 1/2 tsp brown sugar and a dash of milk
Preheat fan forced oven to 180C.
Remove pastry from freezer to soften.
Peel and core apples.
Melt butter in a non-stick saucepan over medium heat.
Add apples, sugar, spices and stir to combine and begin caramelising.
Once they are combined and sizzling add sultanas and water.
Cover and bring to the boil.
Stir frequently, as the apples soften tip the lid of saucepan to allow the water to evaporate and the apple mixture to thicken (approx 8 mins).
Remove apple mixture from heat and allow to cool.
Grease a pie dish (I use a 22cm square).
Line the dish with the pastry making sure it goes up the sides of the dish (You will probably have to use 2 sheets, 1 whole and 1 in sections to cover the whole dish).
Add the apple mixture and cover with the final pastry sheet over the top, pinching the edges of the top and the sides together and trimming if necessary.
Prick the top of the pie with a fork to make air holes evenly over the pie.
To make the glaze, melt the butter and sugar in the microwave and add a splash of milk.
Paint over the surface of the pie.
Pop in the preheated oven for about 30 mins or until the pastry is golden brown.
Remove and serve with cream or vanilla ice cream.
(PS. I love it with plain Greek yoghurt too!)
I have also added mixed frozen berries or rhubarb to the apple instead of sultanas. With rhubarb you need a bit more sugar and a bit longer on the stove - I put the rhubarb in first and then peeled the apples and added them - that seemed to work well.
