I got inspired on Sunday afternoon, it was pouring outside and I had crazy chocolate cravings so I decided to make my favourite brownies. They are so simple, but god they are delicious. I love nothing more than a 1 bowl wonder and they are it. Give them a go if you love rich, chocolatey goodness!
225g dark chocolate (70%)
2 tsp vanilla essence
3 eggs - beaten
1 cup (or just under) of caster sugar
1 and a 1/3 cups of almond meal
200g dark chocolate chips
Preheat the oven to 170C. Grease and line a 24cm square baking tray with baking paper. Melt the chocolate and butter gently in a large mixing bowl (glass or ceramic pref) over a small saucepan with boiling water in it, make sure the bwl seals the saucepan so no water can get into the chocolate mixture). Stir with a metal spoon to combine as the butter and chocolate melt. Once smooth and combined remove from the heat and set aside to cool for a few minutes.
Beat the eggs and the vanilla and measure the sugar and almond meal. Add the eggs and vanilla to the chocolate mixture and stir to combine. Add the caster sugar and stir to combine. Add the almond meal and stir to combine.
Pour the mixture into the prepared tray and bake for 25 - 30 minutes. Leave in the tray to cool before removing the baking paper and cutting into squares.
Serve by themselves or dusted with icing sugar, with cream or mixed through ice cream. However you do, I bet you can't stop at one! I love their nutty texture and how the edges are chewy and the middle is soft. MMMmmmm.
