Choc Berry Muffins
I'm heading away to Sheepvention (yes that's actually a real thing) tomorrow so I thought I had better leave some provisions for the boys and have a car snack for Deb and I. I'm not a great eater of muffins but these combine 3 of my favourite things berries, dark chocolate and natural yogurt! Enjoy x
1/2 a cup of caster sugar
1/2 a cup of olive oil
1 tsp vanilla essence
2 cups of self-raising flour
1 cup of natural yoghurt
1 large cup of mixed frozen berries
100g dark chocolate - roughly chopped.
Preheat your over to 200C and grease (or line) your muffin tin (12 top).
In a large bowl beat eggs until a few bubbles form and then slowly add the sugar while beating. Once the sugar is combined slowly pour in the oil, still beating and add the vanilla essence. Add the yoghurt and continue to beat until smooth.
Sift 1/2 the flour into the bowl and beat on low until combined. Sift in the other half and beat until combined. Add the berries and chocolate with the beaters still on low and beat until combined.
Spoon batter into the prepared tin and bake for 18 - 22 mins.
Remove from oven when they are golden on top and spring back when you touch the top. Allow to sit for a couple of minutes and then take out of the tin to cool on a wire rack wrapped in a tea towel.
No matter how tempted you are wait until they cool a bit before eating, the berries and the chocolate are HOT!
