Healthy Banana Bread
It's always good to a have something sweet in the cupboard for lunches or an after dinner snack. I prefer, and believe me its not always possible, to have something homemade if I can. I got inspired by 3 very ripe, ie no one is going to eat those, bananas and decided to find a recipe that was quick and not too sweet. I adapted this from a couple I found online and was pretty happy with it, the proof was that it disappeared very quickly! Enjoy xx
1½ cups plain flour
1½ tsp. baking soda
½ tsp. sea salt
2 eggs, lightly beaten
3 medium - ripe bananas - mashed
½ cup plain or vanilla Greek yogurt
¼ cup honey
¼ cup brown sugar
Preheat your oven to 180C, and lightly grease and line a loaf pan.
Sift flour and baking soda into a large bowl or jug, and salt. Stir until well combined and set aside.
Put the eggs into the mixing bowl and beat lightly with electric beaters (on low). Add mashed bananas, Greek yogurt, honey, and brown sugar, and beat until well combined.
In batches add the dry ingredients to the banana mixture, beating on low until combined. Be careful not to overmix.
Pour the batter into the loaf pan, spreading it out evenly, and bake for 35-40 minutes, or until a skewer inserted into the middle comes out clean.
Remove from oven and let cool for about 10 minutes before transferring to a cooling rack to cool completely.
