This is quickly becoming a favourite for me and the household. I love it because it take 15 minutes, it is healthy and it tastes great. The boys are more about the taste and that sometimes I make wedges with it, anyway, that's another story. Enjoy xx
Ingredients (for 2 - adjust as you need to)
2 thickish Gummy Shark fillets (the long skinny ones are not ideal)
1 chilli - chopped
1 large clove of garlic - chopped
A handful of coriander - chopped
Salt and Pepper
4 thick slices of your favourite Sourdough bread
1 small carrot - grated
1/2 a cucumber - grated
A good handful of shredded iceberg lettuce
2 tsp mayonaisse
1/2 tsp dijon mustard
1 lemon - for the juice
I start by making the slaw and pop in in the fridge until you are ready to assemble the sandwiches.
Mash the avocado, grate the carrot and cucumber, and chop your lettuce. Combine in a bowl. Mix the mayonaisse, mustard, 1/2 the lemon juice and salt and pepper together in a cup and mix into the vegetable with your hands, making sure the avocado and dressing coat the other ingredients. Cover and put in the fridge.
Chop the chilli, garlic and coriander and add with salt and pepper to a mortar and pestle, and bash until a smooth paste forms. Add a drizzle of olive oil and combine. Coat the fish with this marinade and heat a non stick pan to a high heat. Add the fish and the marinade to the pan and fry until cooked through turning regularly. Don't leave the fish sitting in the marinade for long and DON'T put it in the fridge - it will cure the fish and it is disgusting (lesson learned the hard way!).
While the fish is cooking toast and butter the sourdough. When the fish is cooked squeeze the other half of the lemon over the fillets, add a thick layer of slaw to the bottom slice of bread, top with the fish fillet and put the second slice of bread on top. I served it with some steamed corn with black pepper and butter. Delicious!
